Spinach Muffins

Muffins again! Now with spinach!
Instead of blanching them this time I steamed them. For that I washed them, shook them and when moist put them in the pot, medium fire, covered and let them steam with the dampness of the wash.

When wilted, I squeezed all the water out of them.

And processed them.

I mixed them with eggs, onions, salt and pepper.

And put them in the oven at 350F for twenty minutes.

For garnish, some nutmeg and creme fraîche.
