One hen of a week

I love Grant Farms. That’s where I get my veggies (CSA mode) and that’s where I get my eggs from (weekly subscription). So when they said they had hens for 10 bucks a pack of five, I said let’s do it.

A little bit big. I actually thought they’d be smaller, but now that I look at them they look perfectly sized, so I have no idea what was I thinking.
I took two out of the bag, and coated them in salt and pepper. Put some onions inside, as well as bay leaves.

Covered them in foil and put them in the oven for three hours.

Hen’s meat is much tougher than roaster meat, and that’s why it has to be cooked for a longer time in foil – to try and keep the juices IN and ensuring that it cooks thoroughly
