Buffalo! So when I realized I needed to use the curry sauce as fast as possible I decided to immediately go to Whole Foods and get some pastured finished stew meat. But for the same price I could get Wild Buffalo… and my wallet cried.
Look at the color! It’s so beautiful, red, shining, not unlike grass-fed meat (the fact that Whole Foods in Boulder now carries almost exclusively grass fed meat makes it a joy to stand next to the butcher, even if it’s just admiring the color of the meat). So I got my slab and diced it, and put it in the crockpot with the extra curry sauce I made the other day.
